Instructions:
- In a small bowl, add cumin, smoked peppers, ancho chili powder, salt, and pepper. Move.
- Pat the slices of dried chicken with paper towels. Season both sides of the chicken with the seasoning mixture.
- Heat the Lagostina Casserole Dish to medium heat.
- Add grapeseed oil to the pan and then chicken.
- Cook each side of the chicken until it's no reddish color, then remove the chicken

- Cover and reduce heat to boil. Simmer for 20-30 minutes or until the liquid has evaporated.
- Add corn to the pan when the rice is cooked. Stir to combine everything. Place the chicken on top of the rice mixture. Sprinkle with Mexican cheese.
- Cover to melt the cheese, about 2 minutes.
- Garnish with fresh cilantro, green onions, lime slices, and avocado slices
