Instructions:
- Heat a medium skillet to medium heat, add olive oil and pancetta.
- Saute until pancetta brownish, about 4-5 minutes.
- Add the onions to the pan and a little caramel, about 5-7 minutes.
- Add garlic and saute for 30 seconds, add fresh thyme.
- Continue cooking for one more minute.
- Bring a large pot of water to a boil, add the orecchiette pasta and cook until al dente.
- Add peas for the last 2 minutes when cooking pasta.
- Reserve 1 cup of the cooking liquid for the pasta and drain the remaining pan.
- Add pasta and peas to a large bowl, together with the caramelized onions, goat cheese, pancetta, lemon juice, and cooking liquid.
- Throw the pasta gently until the goat's cheese melts and is thoroughly mixed.
