Ingredients:
- 2 T. coconut oil
- 1 large onion, diced
- 3 cloves of garlic, chopped
- 2 pounds. ground chicken
- 1 tsp. salt
- 2 T. Fine cumin
- 1 1/2 T. dry coriander
- 1 T. lime peel
- 1 lime juice
- 2 tsp. chili powder
- 3 T. flour
- 2 white cannellini beans, rinsed and dried
- 5 oz. Fresh spinach
- 1 1/2 cups frozen, thawed corn
- 4 cups of low-sodium chicken broth
- 1 (4 ounces. Can) diced green chilies
- 1/2 cup of freshly chopped coriander
- 1/2 cup grated jack Monterrey cheese

After preparing all the necessary ingredients as above. Let's start making Chicken and White Bean Chili. Please follow the steps below:
Instructions:
- In a large saucepan or Dutch oven, thaw coconut oil over medium-high heat.
- Add the shallots, and cook until transparent. Add garlic and cook for 30 seconds. Add ground chicken, salt, cumin, chili powder, lime peel, and dried coriander leaves.
- Cook, stir to include all the flavors and cook the chicken, about 8-10 minutes. Stir in the flour to thicken the sauce.
- Add beans, spinach, corn, chicken broth, green chili, and lime juice.
- Bring the mixture to low heat, and simmer for 45-50 minutes. Season with salt and pepper to taste. Garnish with fresh coriander and Monterrey jack cheese.
- Chicken and White Bean Chili are ready to be served!
