    Ingredients: 


    • 2 tablespoons of olive oil
    • 1 1/2 cups onions, chopped
    • 2 cloves of garlic, chopped
    • 2 medium carrots, diced
    • 1 large zucchini, diced
    • 1 large pumpkin, diced
    • 1 cup of frozen corn
    • 1 ½ cup green cabbage, thinly sliced
    • 1 can of kidney beans, dried & rinsed
    • 1 can of white kidney beans (or tasty north beans), dried & rinsed
    • 6 oz. fresh spinach
    • 2 teaspoons of dried basil
    • 1 teaspoon of dried oregano
    • 1/2 teaspoon of dried thyme
    • 1/2 teaspoon of red pepper flakes
    • 1/4 cup white white
    • 2 (15oz.) Canned diced roasted tomatoes
    • 7 cups of vegetable broth
    • 1 glass of water
    • 1 cup small whole wheat pasta skin
    • 1/2 cup parmesan cheese for garnish

    After preparing all the necessary ingredients as above. Let's start making Hearty Minestrone Soup. Please follow the steps below:

    Instructions:


    • Preheat a large Dutch Oven or Soup Pot on medium heat. Pour in olive oil and then add onions immediately.
    • Saute until transparent, about 3-4 minutes.
    • Next, add the garlic and saute for 30 seconds and immediately add white wine. Cut the chocolate bite from the bottom.
    • Next add carrots, zucchini, squash, and corn. Saute for 6-8 minutes, until the vegetables begin to soften.
    • Next add the basil, oregano, thyme, red chili flakes, salt & pepper. Stir until the spices are combined.
    • Add roasted tomatoes, water, and vegetable broth.
    • Bring to a boil and then simmer for 15 minutes to let all the flavors seep together.
    • Next add the noodles, kidney beans, and white beans. Cook for 10 minutes, until the noodles, is finished.
    • Add cabbage and spinach, stir until wilted, about 2-3 minutes.
    • Serve with shredded parmesan cheese on top!
    • Hearty Minestrone Soup is ready to be served!
