    • 1 pint of cherry tomatoes
    • 2 tablespoons of butter

    • 1/3 cup fresh, chopped basil
    • 3 zucchini, made into noodles

    After preparing all the necessary ingredients as above. Let's start making Shrimp Scampi with Zucchini Noodles. Please follow the steps below:

    Instructions:


    • Heat a large skillet to medium heat. Add 2 tablespoons of olive oil and shrimp.
    • Season the shrimp immediately with 1/2 teaspoon red pepper, salt & pepper.
    • Saute each side for 2-3 minutes or until the shrimp turn opaque.
    • Remove the shrimp from the pan.
    • To the same pan, the shrimp are added to the onion, saute for 3-4 minutes until translucent.
    • Next, add the garlic and saute for 30 seconds, immediately add the white wine to deglaze and remove all the goodness of chocolate from the bottom of the pan.
    • Add cherry tomatoes, cover the pan and stir-fry for 3-4 minutes or until the tomatoes begin to soften a little.
    • Add the shrimp back to the pan, butter, lemon juice, 1/2 teaspoon red pepper flakes, and basil. Stir until the butter is melted.
    • Heat a large non-stick skillet to medium heat. Add 2 tablespoons of olive oil to the pan then zucchini noodles.
    • Saute for 2-3 minutes, and remove.
    • Add noodles to shrimp mixture, stir to coat
    • Shrimp Scampi with Zucchini Noodles are ready to be served!
