Ingredients:
- 1 tablespoon of grapeseed oil
- 1 large sweet onion, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, chopped
- 3 carrots, sliced into coins
- 4 cups diced sweet potatoes
- 2 tablespoons of cumin
- 2 tablespoons of chili powder
- 1 tablespoon of smoked paprika

- 1/8 teaspoon black pepper
- 4 cups of vegetable broth
- 28 oz. Fire-roasted diced tomatoes
- 14 oz. Low-sodium black beans, dried & rinsed
- 14 oz. low sodium red beans, dried & rinsed
- 1 1/2 cups frozen corn
- 1/2 cup of fresh coriander
- 1 lime juice
- salt to taste
- Optional garnishes: Greek yogurt, diced onion, jalapeno slices, avocado, cilantro, or cheddar cheese

After preparing all the necessary ingredients as above. Let's start making Sweet Potato Black Bean Chili. Please follow the steps below:
Instructions:
- Change your Instant Pot to Saute setting and let it heat up
- Add Grape Seed Oil to Instant Pot
- Next, add diced onions, red peppers, and garlic to the Instant Pot
- Saute until transparent or about 3 minutes
- Add carrots, chili powder, smoked paprika, sweet potatoes, cumin, paprika, cinnamon, black pepper, and salt
- Saute for 4 minutes while stirring to mix everything
- Next, pour the vegetable stock and roast the tomatoes. Use a spoon to stir everything thoroughly
- Place the cover on the Instant Pot, close the lid
- Cancel Saute settings
- Switch the Instant Pot to the Soup / Broth setting and set the timer for 10 minutes
- When finished, use the Quick Pressure Release method
- Remove the lid after the pressure is completely released
- Cancel Soup settings
- Switch the Instant Pot to the Saute setting
- Add black beans, kidney beans, frozen corn, fresh coriander, and lime juice
- Let the soup stir for 5 minutes
- Add greek yogurt, fresh cilantro, diced onion, and jalapeno slices (Optional)
- Sweet Potato Black Bean Chili is ready to be served!
