    • 1/2 lb. shitake mushroom, the stem is removed and sliced
    • 1 lemon juice
    • 2 tablespoons of fresh, chopped thyme
    • 2 1/2 cups low sodium chicken broth
    • 3 tablespoons of arrowroot

    After preparing all the necessary ingredients as above. Let's start making Pan-Seared Chicken with a Wild Mushroom Thyme Sauce. Please follow the steps below:

    Instructions:


    • Heat a large skillet to medium heat.
    • Season chicken breast with salt & pepper.
    • Add coconut oil and chicken breast, saute for 5-6 minutes per side.
    • Next, add the onions to the pan. Sauté for 3-4 minutes until translucent.
    • Add garlic, stir-fry for 30 seconds and then add lemon juice.
    • Add cremini and shitake mushrooms, and fresh thyme.
    • Saute for 10-15 minutes, until the mushrooms soften and begin to brown.
    • Add chicken stock and season with salt & pepper to taste.
    • Bring to a boil, then reduce to boiling.
    • In a small bowl, mix 3 tablespoons of arrowroot with 1/2 tablespoon of water.
    • Add arrowroot mixture to broth mixture. Enter to merge.
    • Let it boil for 3-4 minutes until it thickens.
    • Add the chicken back to the pan with the mushroom mixture, cover and simmer for 3-4 minutes.
