What do you need to make Chicken Nachos?


  • Shredded Rotisserie Chicken
  • Tortillas (I use Siete sea salt tortilla chips for free)
  • Shredded Cheddar or Mexican Cheese
  • Low Sodium Black Beans
  • Frozen corn
  • Red onion cut into squares
  • Avocado
  • Diced Tomatoes or Pico de Gallo

Ingredients:


  • 30-40 tortilla chips
  • 8 oz. grated Mexican cheese
  • 2 cups shredded chicken
  • 1/2 cup low-sodium black beans, dried and rinsed
  • 1/2 cup without salt, no sugar, sweet corn (I use canned corn)
  • 1/3 cup diced onion
  • 1 jalapeno, sliced
  • 1 avocado, sliced
  • 1 Rome tomato, diced

Cilantro Limestone Crema:


  • 1/3 cup plain Greek yogurt
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • 1/2 cup of fresh coriander
  • 1 lime juice

Instructions:


  • Preheat the oven to 450 degrees F.
  • To make Cilantro Lime Crema, add the following to the Greek snack processor yogurt, cumin, garlic powder, coriander, and lime juice. Blend until the coriander is finely chopped and smooth. Put aside.
  • Line the baking sheet with tinfoil or baking paper. Spray with cooking spray.
  • Spread the tortilla chips on a prepared baking sheet.
  • Sprinkle with 1/3 cup of cheese into tortillas.
  • Then add black beans, corn, shallots, and grated chicken.
  • Add the remaining cheese to the top.
  • Place the baking sheet in the oven and bake for 10-15 minutes. Until the cheese melts and tortilla chips are slightly browned.
  • Remove the nacho from the oven and top it with jalapeno slices (or pickled jalapenos), Rome tomatoes, avocados and drizzle with cilantro lime.
  • Chicken Nachos is ready to be served!
