- To the crockpot, add chicken breast, diced onion, garlic, zucchini, squash, smoked peppers, chipotle chili powder, and roasted diced tomatoes
- Add salt & pepper and add chicken stock
- Stir to mix everything

- Remove the chicken from the crockpot and shred it using two forks or cut it with a knife
- Remove one cup of broth and place it in a blender with coconut milk
