    • 6 zucchini pumpkins

    After preparing all the necessary ingredients as above. Let's start making Italian zucchini boats. Please follow the steps below:

    Instructions:

    • Preheat the oven to 350˚F.
    • Saute shallots, mushrooms, and cauliflower and garlic over medium heat until soft. Add the ground turkey and Italian seasoning and continue cooking, stirring and breaking meat until the meat is cooked. Add marinara sauce, leave 1 cup for topping, and stir until smooth.
    • Cut the ends of each zucchini and then cut them in half-length. Use a spoon or melon baller to make a hole in the middle (the part with the seeds) of zucchini. Place each zucchini on a baking sheet, cut the top.
    • Fill each zucchini with one tablespoon of the meat mixture and top it with marinara sauce and a sprinkling of cheese.
    • Cover with aluminum foil. Bake for 25-35 minutes, then remove the aluminum foil and continue cooking for another 5 minutes.
    • To serve, remove from the pan, garnish with fresh parsley if desired
