Instructions:
- For a medium skillet, add chicken broth, bay leaves, and boneless chicken breast
- Bring to a boil, boil the chicken until cooked, about 10-15 minutes
- Preheat a large saucepan or oven over medium heat
- Add coconut oil, diced onion, and garlic
- Saute until the onions are transparent
- Add chopped pepper, chipotle pepper sauce, and smoked peppers
- Stir until smooth and let it cook for 2-3 minutes
- Then add the diced roasted fire tomatoes
- Stir and allow to cook for 2-3 minutes
- Add zucchini and diced squash
- Season with salt & pepper
- Stir and simmer for 5-6 minutes.
- Remove the chicken from the stockpot (stock) and cut the chicken using two forks
- Add to the oven sweet corn, shredded chicken, lime juice, fresh coriander, and chicken stock
- Reduce heat to medium-low and simmer for 30 minutes so that all ingredients absorb
- Selected toppings: diced avocado, cheese (Cheddar or Queso Fresco)
